I specifically reread the book after seeing the first ep, because I wanted to compare. I enjoyed that a lot.
I were to guess? It would be all the space opera parody stuff and the human stuff that was outside of the Murderbot's perspective?
Yes, all the "canon" Sanctuary Moon scenes were added. Murderbot just talks about watching it in the book, but barely mentions details. Having an actual plot played out, including the self-insert part, was added.
As for outside of Murderbot's pov... murderbot does go through all the surveillance in the book, too, so that wouldn't necessarily exclude things happening in the habitat while murderbot isn't present. The stuff I most strongly noticed was everything to do with sex and romance. Murderbot just doesn't like any of it and, if at all, mentions its dislike in passing. Everything concerning Gurathin's crush on Mensah, and the throuple, and the whole character of LeeBeeBee, was not in the books.
In addition to that: the whole ep of Murderbot and Mensah in the hopper. Everything about the flora and fauna of the planet. Ratthi not having any weapons training. Everything in the last ep that happened between Murderbot falling and waking up with its memories restored. Murderbot just has a blackout in the book and no idea what happened in the middle.
Then okay, I agree - the additional stuff didn't work for me. Because the space opera, the throuple, the romances and crushes, LeeBeeBee, and G's crush - did not work for me. I get that they were trying to develop the other characters? But I wish they'd found another way. And the space opera parody grated, but I don't like parodies.
